Chloé Asseo-Fabre , L’Aventure Winery

Chloé Asseo-Fabre is the wine character at L’Aventure Winery in Paso Robles, California. Her educational and career path did not take a traditional route for a winemaker’s daughter. After going to school for marketing and visual communication in fashion, she went back to France to gain some professional experience in the retail and fashion industry. After two years of working for high-end brands, she decided to move back to Paso Robles, which is when she realized she wanted to join the family business and put her acquired marketing skills to good use. In 2014, she officially joined L’Aventure and took charge of all the sales and marketing. She also became more involved in the vinification process by being part of the blending decisions with her father. Lastly, as of January 2021, she took over as General Manager and now oversees the operation of the winery.

Wine has always been part of her life. Like her father loves to say, “Chloe was born in the barrels”. Rest assured this is just an expression, however, it perfectly summarizes her upbringing. Originally from France, the Asseo family-owned multiple properties in Bordeaux. After making wine for 17 years in Bordeaux, Stephan got tired of the French regulations and decided to start a new adventure in the New World where he would gain more freedom with viticulture and vinification. In 1998, they moved to Paso Robles and started L’Aventure Winery.

What’s the ONE THING most unique, authentic, & memorable about your brand?

What makes L’Aventure so special is the story of how my parents, Stephan and Beatrice Asseo, built it from scratch. My dad was a winemaker in Bordeaux, but both he and my mom felt stuck by all the strict rules. They wanted the freedom to create something truly their own, so they took a huge leap of faith, leaving behind their home, family business, and everything familiar, and moved us to Paso Robles, which at the time was completely off the radar.

They named it L’Aventure because it really was an adventure — a bold new chapter, full of unknowns. That spirit of creativity, independence, and passion still defines everything we do today. We’re a family winery that’s all about pushing boundaries, trusting our instincts, and staying true to who we are. L’Aventure is about building something meaningful — not just as a family, but together with an incredible team that feels like family — and sharing that journey with everyone who comes through our doors.

Describe how and what you’d do with your winemaking career or winery business if you were not constrained.

I would create a destination where people don’t just visit for a tasting, but experience the full adventure. Imagine private vineyard “pods” — small, intimate spaces where guests could stay surrounded by the vines — and curated travel experiences that explore not just Paso Robles, but also amazing places around the world, always with L’Aventure at the heart of it. I’d love to collaborate with chefs, artists, and other wineries to create one-of-a-kind experiences that celebrate discovery, creativity, and great wine.

In the end, it’s about building a community that’s connected through the adventure, making L’Aventure not just a place you visit, but a journey you live, no matter where you are.

What is the One Wine most emblematic of your brand and/or winemaking style? Tell us its story.

The Estate Cuvée is the wine that truly captures who we are at L’Aventure. It’s a blend of Syrah, Cabernet Sauvignon, and Petit Verdot — a nod to our Bordeaux roots, but with the boldness and freedom of Paso Robles. It’s crafted from the very best fruit on our estate, the ultimate “cherry-pick” of each vintage, and it’s a true reflection of our terroir. It has incredible depth, complexity, and texture, with power and elegance all at once. It also ages beautifully, gaining even more layers and character over time. Like Bordeaux-style wines? Bonus Question: What is the one thing people would be surprised to learn about you?

Wine wasn’t always the obvious path for me. But as I got older, I realized how special our story at L’Aventure really is… the passion, the creativity, the risks my parents took — and I felt this pull to be part of it. Now, I can’t imagine doing anything else.
