This is a classic Atlas Peak Napa Valley Cabernet Sauvignon. I believe that changing the altitude (about 1600 feet) benefits the attitude of this Napa Cab, as this higher-elevation vineyard lends itself to fruit with higher acidity and more integrated tannins. Be patient and diligent.
This wine packs a punch, clocking in at 15% alcohol. However, if you’re a lover of big Napa Cabs, this wine is for you. I would rate this as drinking Very Good+ right now. I think it will move to Excellent with some age. Give wine time like we do with children. If well coached and advised they excel with age. This wine is worth pursuing now, especially if you like grilled beefsteak of any cut, grilled pork, or a serious paisano meat sauce.
So for me, this wine begs for “Italian”, and I’m happy to oblige. Grilled pork tenderloin with truffle marinara sauce, perhaps? Add a 1/2 pound of fusilli for two, and some sliced grilled eggplant, and you’ve got a meal that respects this big bad Cab. You’ll want some extra sauce and a good aged parmesan on top of everything mentioned. Brace yourselves for a feast with this delightful Napa Cabernet Sauvignon.
This wine was chosen by Trey Eppright (and friends) as the most emblematic of the Parable brand. Taste it and you’ll know why. Read Trey’s interview here for more details https://winecharacters.com/trey-eppright-parable-wines/
