2021 Castoro Cellars “Quaranta”

“Quaranta” signifies the 40-year founding of Castoro Cellars by Niels and Bimmer Udsen. I tasted the Quaranta blend – Cabernet Sauvignon, Zinfandel, Petite Sirah, and Syrah – over 2 nights, and I can confidently say that it improves with time. Big red blends from Paso Robles can benefit from decanting and time, as was the case here. Tannins and oak effects softened and integrated by the second night resulting in a rich and dense dark fruited blend with nice residual acidity. Not sure how they accomplished only 13% alcohol in a region renowned for high 14% and 15%, so kudos to the winemaking team.

This is an excellent wine with all the hallmarks for aging. Niels, Bimmer, and winemaker Tom Myers put their “John Hancocks” on the back label, so I think we can all agree this wine is one for the ages. Hold for five to 12 years from the vintage date.
