Big thanks to Christi for sharing a nine-year-aged estate red wine. Primary flavors include dried cranberries, tart plum, sage, and black pepper on the palate. Tertiary flavors are quite interesting, with savory and herbal notes, maybe sage, and a hint of tobacco.
This is a Bordeaux-style field blend of 60% Merlot, 30% Cab Franc, and 10% Cab Sauv. The fruit comes from 16 acres at the Lavender Oak estate. The tech sheet notes that vineyard practices are organic and regenerative, with no tilling of cover crop and no use of pesticides or herbicides. The wine was aged for three years in neutral French oak, and nine years in the bottle, to date.
Drink up now with marinated beef or lamb. We added wild rice pilaf with shallots for our dinner pairing.
